Simple Peanut Brittle

300g caster sugar and 300g salted peanuts
bang bag of peanuts with a rolling pin until small ish . line a tub with baking paper . then heat sugar gently not boiling take it slow moving in to sides when goes golden add peanuts , and tip into tub on paper b quick it sets very quick ( 1 min) and leave to cool 1 to 2 hrs or in fridge . then tip out and break with a hammer . du da simplessmile yummy

ps use a small deepish tub not a flat sheet
