Recipe 4 Jamtarts N Monce Pies

8oz sr flour
half tsp salt
2 oz lard
2oz margarine
6-8 tsp cold water
1 oz caster suger(4 sweet pastry)

1/ Mix flour and salt in basin, rub in lard n margarine.
2/Using a knife to cut and stir, mix with cold water to form a stiff paste
3/ Turn dough out on a floured surface and roll out.
4/ Cut out rounds line patty tins
5/ Put a little jam or lemon curd in eac(do not overfill as they will boil over)
6/ bake in moderatly hot ove (375-400f gas mark 5-6)

Mince pies

8oz sr flour
half tsp sat
5oz lard (or lard and margarine)
cold water (approx 1/4 pint)

1 mix flour and salt in basin add fat cut in2 small pieces.
2/ stir with a knife (do not rub in)
3/ Mix in2 a stiff paste with cold water
4/ Turn on2 a floured surface and roll out in2 a narrow strip; fold into 3, turn one of the open ends towards u and roll out do this 3 times in all.
5/leave pastry 2 rest(about 15 mins) then roll.
6/ Always take care to roll away from you and do not break the little air bubbles that will rise
7/ In hot weather allow the pastry to rest for for 20-30 mins in the fridge.

Roll out pastry very thinly do abot 20 large and 20 small
Line the patty tins with the large rounds and put 1 tsp of mincemeat in each
wet the edges and cover with the small rounds
brush the top with beaten egg or milk and make a small hole in top
bake in hot oven (425-450f gas mark 7-8) about 15 mins.

You can dust with a little icing sugar
