After having a few conversations to people about cooking/baking i thought it might be a good idea to share our ideas here ! If anyone is interested please post as i am happy to post recipes i use and would be glad to hear anyone elses .

pasta cooked add in cooked sweet corn and tuna with mayo makes a lovely summer dish smile

[b]This is my toughest part of the year - harvesting and making jams pickles etc.
This year i have been interested in free foods and my friend and i went 'gathering' on weds just gone - found a new fruit wlid cherry plum - haws - elderberries - apples inc crabapples - pears - rosehips - sloes -blackberries nuts and cobnuts = i think thats it but we had over 4 carrier bags each and some containers was a brilliant feeling but the work begins when you get it all home!
Anyway i deviate here is a recipe i hope some will try

Hegderow jam

8oz rosehip 1lb blackberries 8 oz haws 1lb elderberries 8 oz sloes 4ox hazelnuts 8oz rowan berries 1lb crabapples sugar

Wash fruit well. Put rosehips haws and rowanberries sloes and chopped crab apples into pan, add water to cover and cook til tender. Sieve and weigh the pulp. Put the pulp into pan with blackberries elderberries and chopped nuts.

Simmer for 15 mins then add sugar - 2lb sugar plus wieght of the pulp in sugar too.

Cook over a low heat until the sugar has dissolved - then boil rapidly until setting point is achieved

Lavender buscuits

2 teaspoons of fresh lavender flowers
(cut off a few stalks and wash under tap then pick off flowers and pat em dry)
125g or butter in small pieces at room temp
1 egg (ducks is best for a light rich buscuit)
100g caster sugar and 150g sifted self raising flower

Pre heat oven 170/gas3

Cream together the sugar egg and butter til it goes pale and fluffy. Gently stir in lavender and fold in the flour.

Using teaspoon blob onto a greased baking tray allowing plenty of room for em to spread and grow.

!5 mins

You can eat em as they are or add cream or little icing sugar - i like em served cold with rhubarb n custard x

Rosehip syrup

Kilo of washed (and broken off stalks) rosehips
750g of sugar

Juicer or blend em up!

Put chopped rosehips into 1.75 litres of boiling water - do this as soon as chopped or u will loose the valuable vit C that is needed to make this so gooood for us x
Once they are boiling turn em off and let stand for 15 mins

Pour through a jelly bag (clean tights will do)
Keep the juice!
Put chopped rosehips back into pan and add another litre of water - repeat about three times to get the goodness out of the rosehips

The syrup that comes out looks a little like tomatoe soup. Add the sugar and boil. Once it is boiling you can start bottling.

Bottle in steralized bottles best to use small ones and syrup will go off once it is opened! Store in cool dark place and once opened put in fridge.

Great drink hot or cold - dilute to taste also lovely syrup to use on icecream or yoghurt of anything you want

One of the best healthiest drinks you can get and very expensive to buy but brilliant when its freeeeee

Custard

Gotta write this one up - only done it a few times myself since keeping chickens have a glut of eggs at times xxx

300ml semi skimmed milk
3 wgg yolks
1tblspn of caster sugar
1 tsp cornflour
i vanilla pod split lengthways

Put milk and vanilla into heave based saucepan and heat until it simmers. Remove from the heat and allow to infuse for about 10 mins
Meantime mix egg yolks sugar and cornflour into a smooth paste in a mixing bowl or jug

Remove the vanilla pod from the milk, If likes scrape the seeds back into the milk for a stronger flavour. Pour the warm milk onto the egg mixture stirring

Pour back into the pan and cook gently over a low heat stirring constantly with a wooden spoon until thick enough to coat it thinly. DO NOT ALLOW TO BOIL Remove from heat as soon as thickened and serve hot or cold

Tips/ideas
If no vanilla pods - vanilla caster sugar or 1 tsp of pure vanilla extract.
Instead of vanilla flavour with a strip of lemon orange or lime zest or add 2 tsp of coffee powder or 10z grated dark chocolate or even a tblsp of liquer into cooked custard x

cheese one plz my mother in law used to make it family loved it (she died last year) and didn't leave recipe father in law hankering for it x
